Todd Richards Strawberry Rum coolers make you feel like you’re on a tropical island.
Being stuck at home, anything that makes me feel like I am on vacation is for me!
The strawberry base is made with strawberry, ginger, lime, and agave, a perfect balanced base for a boozy addition of both dark and light rum! The cocktail is sweet and spicy, being topped off with ginger beer!

Ingredients
Strawberry Rum Cooler Base
2 ½ cups very ripe strawberries, hulled and sliced
1 cup water
2 tablespoons fresh lime juice
2 tablespoons agave syrup
¼ teaspoon ginger
Assembly
¼ cup strawberry-rum cooler base
2 tablespoons white rum
2 tabsloons dark rum
6 dashes of orange bitters
¼ cup ginger beer
Crushed ice
Orange wedge, for garnish
Recipe
Strawberry Rum Cooler Base
Bring the strawberries, 1 cup water, lime juice, agave syrup, and ginger to a simmer in a saucepan over medium-low heat. Cook until mixture is fragrant, and strawberries are tender. Remove from the heat, and cool completely, about 1 hour.
Transfer the strawberry mixture to a blender, process until smooth. Refrigerate for at least 1 hour or up to 5 days.
Assembly
For one drink, combine the strawberry-rum cooler base, both rums, the dashes of bitters in a mixing glass, and top with ice. Stir until the ice dilutes the puree.
Pour over crushed ice, top with ginger beer and garnish with an orange wedge.
